Hearty Chicken Noodle Soup

From a Lion House Cookbook that my mom had in 1980

2 tsp chicken soup base (bouillon)
3 cups chicken soup stock
2 cups chopped carrots
2 cups chopped celery
3/4 cup chopped onion
2 cans (10 oz) cream of chicken soup
1/4 cup evaporated milk or 1/2 cup whole milk
2 cups cooked diced chicken
4 cups cooked noodles (wide egg noodle)
Roux (2 cups flour to 1 cup butter)

Ingredients

Chicken broth and bouillon
2 cups sliced carrots
2 cups sliced celery
3/4 cup diced onion
Add vegetables and simmer until tender
Add cooked noodles
Add canned soup
Add diced chicken
Season to taste
Serve

Banana Coffee Cake-Muffins

Recipe from the kitchen of Pat Daniels

 2 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tablespoon Postum or instant coffee
1 tablespoon hot water
1 1/3 cups mashed fully ripe banana (about 3 bananas)
1 cup butter, softened
1 1/4 cups sugar
1 egg
1 cup chocolate chips (milk or semi-sweet)

 Preheat oven to 400 degrees.  Grease muffin tins.
Ingredients
 I made a double batch so picture amounts are double the recipe size.
Add dissolved Postum to mashed bananas and stir.   Mix dry ingredients in separate bowl and set aside.
Beat together butter and sugar until light and fluffy.  Beat in egg.
Mix in banana mixture.
Stir in flour mixture until well blended.
Fold in chocolate pieces. Do not over mixing at this point. Fold in chips.

Divide batter evenly in prepared muffins cups.  Fill 3/4 full.
My mother always added a few chips on top and a sprinkle of sugar.

I use a cookie scoop since I can never eyeball it to make it even in the cup.
Bake at 400 degrees for 12-15 minutes.  I like the edges just barely brown.
 My family always likes things under cooked more that over cooked so I watch them carefully.
You can always do the tooth pick test.
I like to make them in the mini muffin tins also.
One recipe makes about a dozen, depending on how full you fill the cups.  Any extra I put in the mini tins.  If making all mini muffins it makes about 36.

Utah @ USC

3-19      

This week going to USC I was happy because all my kids came with us. It was a very short trip since we played early on Saturday, we leave the hotel with the team 2 1/2 hours early.  We arrived Friday night at dinner time. The team stayed at the hotel and watched a movie there and had their meetings.

Helen and I visited with 2 of the kickers, Andy Phillips and Tom Hackett for an hour between their meetings.  What great young men they are.  That was fun getting to know them better.
I always think having a police escort where ever the team goes is pretty cool.

Utah @ Arizona

It was a pretty nice week after the win over Stanford.  Everything is always better when you win!
The weather has been beautiful and I am really enjoying fall.
Tyler and Kylie came on the trip to Arizona with me and the team.  I love it when the kids go with me.  There were also a couple coach's wives who came that cannot come on the main wives trip to Oregon.  My brother, Patrick, lives in Mesa, Arizona so he drove over to see the game also.

The plane ride home is quiet as you would expect after a loss. We did not get home until almost 4:00 in the morning so most people slept.  They wake up tomorrow and start the process all over again. @USC next Saturday.
